ALFRED L. WOLFF Hydrocolloid Xanthan
Xanthan (or Xanthan Gum) is a cold water soluble hydrocolloid with outstanding stabilising, suspending and thickening properties in acqueous systems. Widely used in the production of mayonnaise, salad dressings, soups and sauces as well as desserts, low-calorie syrups and beverages to stabilise oil-in-water emulsions. Xanthan is also used in cosmetic and pharma products to harmonize the texture of creamy emulsions. Xanthan Gum can be used alone or in combination with other natural hydrocolloids, for ex. Locust Bean Gum and Guar Gum, aiming at a synergy of their respective properties to increase the viscosity and the gel structure of the finished product.
